The scallops are just simply seasoned with salt and pepper and seared until brown on both sides, the Bourbon glaze is a simple pan sauce made by flaming a splash of Bourbon in the same pan you seared the scallops in and finishing with a drizzle of Maple Syrup to bring it all together.
